Drinks
Peach Frosé
This is THE girly drink of the summer. It’s just the one you want in your hand as you chill by the pool in a big floppy hat. Imagine a frozen version of a bellini, but with floral notes and a brightness from the elderflower liqueur. If you don’t want to make a huge batch, this recipe will make enough for 6-8 drinks, you can scale it down to serve fewer people.

Watermelon Tequila Slushie
The secret ingredient that sets these refreshing slushies apart is Aperol – an Italian bitter liqueur made famous by the popular Aperol Spritz cocktail. It is sweet with just a slight bitterness, adding nuance and balance to the drink. If you don’t have it, or don’t want it, go ahead and swap it for an orange liqueur like Cointreau, Grand Marnier, or Triple Sec, which will make a more traditional margarita.

Mangolada
If you’re a mango lover, this version of a pina colada is for you. Start with a bag of frozen mango – it not only ensures you’re using ripe mango, it’s easy, convenient, and already cold. Since I’m saving you a step there, I encourage you to skip the can of cream of coconut (i.e. Coco Lopez) and make your own batch at home. The store-bought cans are full of preservatives and chemicals, and a clean version is as easy as warming canned coconut milk and sugar on the stove. It will make more than you need for this recipe, but it will keep in the refrigerator for a week or longer, or can be frozen in ice cube trays… ready for the next batch of cocktails!

Watermelon Lemonade
You're ten minutes and three ingredients away from a refreshing and flavorful summertime sipper. The real thing, made from real fruit and citrus, is so much better than anything that comes out of a plastic bottle. Depending on the sweetness of your watermelon, you may need more or less sugar. Taste and adjust according to your preference.

Pimm’s Cup Pitcher
A classic Pimm's Cup is always a good idea if you're looking for a tasty, low-alcohol cocktail. Mix up a pitcher for a party and serve right away. The ginger ale will loose its fizz the longer it sits. Pour into ice filled glasses, making sure to get some lemon and cucumber with each serving.

Real Sour Cream & Onion Dip
Making your own sour cream and onion dip is not at all difficult and is indeed a worthy endeavor. The flavor and texture gained by caramelizing sweet onions is unmatched by store-bought mixes. Besides the classic potato chip pairing, this dip is also excellent slathered on a burger, or smeared inside pita bread and filled with grilled chicken or falafel.

Summer Tomato & Peach Salad
I can’t count how many times I make this during the summer months. It’s the easiest side dish, and always gets the most rave reviews. I give options for which vinegars to use, because often I grab whatever I happen to have closest to me when I’m tossing it together. White wine vinegar, red wine vinegar, rice vinegar and even lemon juice all work beautifully. It’s the ultimate easy-breezy summer side. Other types of cheese work well if you’d like to try something different than the feta, such as burrata or goat's cheese.

Sheet Pan Corn with Zesty Lime & Feta
Enjoy this version of Mexican street corn at your next summer soiree. Sheet pan cooking is easy, and also saves space on the grill, but if you'd rather grill the cobs go ahead. The key is the sauce, a thick mayo and feta mixture seasoned with chili flakes and lime zest. Make sure it goes on while the corn is still warm, so it seeps into all the little crevices.

Caesar Slaw
The truth is, I use this egg-free Caesar dressing on all sorts of things, from romaine to potatoes to kale. But one of my favorite ways to use it is on shredded cabbage, which retains its hydrating crunch in every bite and is the perfect foil for the sharp flavors of the dressing. Instead of croutons, I like to top this with canned crispy onions. Scatter them on the salad just at the end so they don’t lose their crunch.

Creamy Feta Potato Salad
I’ve never been a huge mayo fan, but I love a good potato salad and have come up with a mayo-free version that delivers big on flavor. Mashing feta cheese into plain Greek yogurt with a little garlic and lemon creates a creamy, and relatively healthy dressing for boiled potatoes that may just become your favorite new way to potato. Look for feta cheese that comes packaged in brine, instead of a container of pre-crumbled cheese, which will be too dry for this application.

Mains
“Corn Dogs” with Chipotle Mayo
A fun play on words, my "corn dogs" are actually brats served with a flavorful corn salsa and slathered with a spicy chipotle mayo. Use any kind of brat that is your favorite, or use hot dogs instead. The tangy and bright salsa, made with grilled corn, fresh pineapple, pickled jalapeno and scallions elevates a humble food to an "oh my gosh" kind of dish at your next cookout.

Pulled Chicken Sandwiches with Mango Barbecue Sauce
Mangos add a subtle sweetness to this barbecue sauce, which you won't find to be overly fruity. There are enough savory ingredients and spices, like onions, garlic, chipotle and cumin, to keep it grounded. I call for cooking the chicken directly in the sauce, then removing it and shredding it before adding it back to the pot, but if you'd like to skip a step feel free to use precooked poultry. Store-bought rotisserie chicken works great.

Lime-Marinated Grilled Chicken Fajitas with Grilled Avocado
Fun, festive, easy and tasty. Whip up a quick marinade for the chicken, and toss everything on the grill, yes, even the avocado. It might sound strange, but when grilling a halved avocado flesh side down, you end up with a warm, soft and creamy texture to slather all over your warm fajitas. Once everything comes off the grill, place it directly on a large wood cutting board to serve. Slice the chicken and vegetables, and make sure there's a spoon for scooping out the avocado.

Chipotle Maple BBQ Sauce
I came across this recipe years and years ago in the long since defunct Gourmet magazine, and while I would love to give credit where credit is due, I can no longer find the source copy for reference. Fortunately, I had committed it to memory, as I make it all of the time – it is one of the best barbecue sauces I've ever tasted and most simple to make. You would never guess there is not one drop of tomato sauce in it; instead, it is based completely upon roasted bell peppers. Because of this, it is important to roast your own peppers, as jarred will not yield the same depth of flavor. Baste the sauce over bone-in chicken breasts as they grill. Serve a separate portion in a big bowl alongside the chicken.

Lemony Vanilla Pudding with Summer Berries
An egg yolk and cornstarch thickened stovetop custard, gently flavored with cinnamon and vanilla, is just the match for ripe summer berries. This do-ahead dessert will be the perfect ending to your al fresco dinner party.

Lemon Raspberry Ice Cream Pie
Make a simple no-churn ice cream, fold in raspberries and swirl in lemon curd for a simple summertime treat. This has sweet fruit flavor, and a lemony tang tamed by the creamy ice cream filling. Nestled in a graham cracker crust, it’s a fun, frozen twist on a lemon meringue pie. Take it out of the freezer at least 10 minutes before serving for easier cutting and serving, and for optimal texture of the ice cream filling.

Frozen Peppermint Cheesecake with Chocolate Cookie Crust
Chocolate sandwich cookies form the crust and a peppermint cream cheese mousse makes up the filling. Topped with a bit of whipped cream and more crushed cookies, this one is a crowd pleaser. The key to this dessert’s success is serving it at the right temperature. Too cold and it will be hard to get a fork through it, and you won’t be able to appreciate the creamy texture of the cheesecake mousse. Take it out of your freezer 15-20 minutes before slicing for optimal flavor and texture.

Pull-Apart Strawberry Cupcakes with Cream Cheese Frosting
Pull-aparts are a fun way to party. Fresh, pureed strawberries in the batter gives these cupcakes a light, delicate crumb with a subtle fruit flavor, perfectly offset by a rich, fluffy cream cheese frosting. For an Americana themed party, top with red and blue fruit, or skip the berry decoration when serving for a birthday or other celebration.
