A Really Good Tomato Sauce

I originally developed this all-purpose tomato sauce for my turkey meatball subs. It’s also perfect for pizza, lasagne, or spaghetti. It’s quite simple, but gets a sweet, rich tomato flavor from the tomato paste. Make sure to cook it until it turns a dark brownish color before adding the canned tomatoes, in order to maximize it’s potential.

Ingredients
 

  • 2 tablespoons extra virgin olive oil
  • 1 small sweet onion, chopped
  • 1 tablespoon tomato paste
  • 2 garlic cloves, chopped finely
  • 2 teaspoons dried oregano
  • 1 teaspoon sugar
  • 28- ounce can crushed tomatoes
  • 1 teaspoon kosher salt
  • freshly cracked black pepper

Instructions
 

  • Heat the oil in a saucepan over medium heat. Saute the onion until softened, about 8-10 minutes. Do not let them brown Add the garlic and oregano and cook for another minute, adjusting the heat if needed so that the garlic doesn’t burn. Add the tomato paste and cook for 2 minutes, stirring. It should turn darker and start to stick to the bottom of the pan.
  • Pour in the canned tomatoes and add the sugar, salt and cracked black pepper. Simmer for 30 minutes, stirring occasionally. You can put a lid on it, keeping it ajar, if it is splattering. Taste for seasoning and add more salt if needed.
