Apple Pie Overnight Oats in squat mason jars topped with diced apple, diced candied ginger and walnuts, with a small wooden bowl of walnuts on the side
Apple Pie Overnight Oats

Shredded apples, oats and ground walnuts make for the beginnings of a tasty jar of overnight oats, but the star here is the candied ginger, which gives the mixture a sweet, spiced flavor reminiscent of apple pie. I like to use oat milk in this recipe, with a little yogurt to help with a thicker and creamier consistency, but you can use any variety of milk you prefer.

Ingredients

  • 1 cup rolled oats
  • ¼ cup walnuts, toasted and cooled
  • 1 tablespoon chopped candied ginger
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¾ cup oat milk
  • ¼ cup plain yogurt
  • ½ large apple
  • 2 tablespoons maple syrup or honey

Instructions

  • Grate the apple on the large holes of a box grater directly into a mixing bowl. Add the oats, candied ginger, cinnamon, nutmeg, and salt.
  • Using a mini food processor, coarsely grind the walnuts. You could also chop them very finely with a chef’s knife, if you don’t mind them a little crunchier. Add them to the bowl, then pour in the oat milk and maple syrup. Stir well to combine.
  • Spoon the mixture into two small mason jars, cover, and refrigerate overnight. Or, if you prefer, keep the mixture in the bowl and spoon it into bowls in the morning. You can garnish these with more candied ginger, walnuts, or chopped apple to serve if you like.
