Banana Peanut Butter Overnight Oats in mason jar topped with slivered banana and whole peanuts with an empty mason jar in background that previously contained overnight oats
Banana Peanut Butter Overnight Oats

This recipe relies on the same base as the raspberry almond version, but swaps those ingredients for bananas and peanut butter. A great optional add-in would be cocoa nibs, or if you’d like to take it in a more decadent direction, mini chocolate chips. Like the raspberry recipe, the amount of maple syrup keeps this on the less-sweet side. If you know you like your oats sweeter, go ahead and add up to another tablespoon of maple syrup.

Ingredients

  • ¾ cups rolled oats
  • 1 ½ tablespoons chia seeds
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • ½ cup plain yogurt
  • ½-¾ cup milk of choice – cow's milk, almond milk, oat milk or coconut milk
  • 2-3 tablespoons pure maple syrup
  • 1 small banana
  • 4 teaspoons peanut butter
  • optional: peanuts for garnish

Instructions

  • Mix the oats, chia seeds, salt and cinnamon in a medium bowl. Stir in the yogurt, ½ cup of the milk, and maple syrup then pop the bowl in your refrigerator for 10-20 minutes. The chia seeds will expand and soak up some liquid. It will likely be thick, and you will need to add another ¼ cup of milk at the end of the resting period, which will loosen up the mixture again.
  • Cut the banana in half, and save half for topping the oatmeal in the morning. Peel the other half, cut it in quarters lengthwise, then across into cubes. Add the cubed banana to the oat mixture, along with 4 teaspoons of peanut butter. Now is a good time to taste, and make sure it has the amount of sweetness you like. Add more maple syrup if you'd like it sweeter.
  • Spoon the mixture into jars, cover and refrigerate overnight. You could also leave it in the mixing bowl, and spoon it into two bowls in the morning to serve. Garnish with sliced bananas, and peanuts if you like.
