Blueberry Walnut Baked Oatmeal

Lots of baked oatmeal recipes call for melted butter, along with the eggs and milk, but mine uses olive oil for a sophisticated flavor. Without the requirement of melting butter, it also has the added benefit of requiring one less dish. Use a good quality, fruity olive oil, but not one that is a grassy or spicy finishing oil. This recipe comes together quickly in one bowl, but if you like you can prepare it the night before and keep it covered in the refrigerator. Bake as instructed in the morning, and top with more maple syrup, and if you are feeling decadent, a splash of heavy cream, or alt-milk to go dairy free.

Ingredients
 

  • 2 tablespoons extra virgin olive oil
  • 1 egg
  • 2 cups unsweetened almond milk, or use regular whole milk
  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 ¾ cups rolled oats, not instant
  • 1 heaping cup washed and dried blueberries
  • ½ cup walnuts, coarsely chopped
  • 2 tablespoons demerara sugar, or use brown sugar

Instructions
 

  • Preheat your oven to 350 F. Grease an 8 x 8 baking pan with butter or oil.
  • In a large bowl, whisk together the olive oil, almond milk, egg, maple syrup and vanilla, then whisk in the baking powder, cinnamon and salt.
  • Switch to a spatula and fold in the oats, then about ¾ of the blueberries. Pour the mixture into your prepared pan, then top with the remaining blueberries, the walnuts, and the brown sugar.
  • Bake the oatmeal for 30-35 minutes, until the center is mostly set, then remove from the oven and serve warm. Top with more maple syrup and more milk if you like.
