Chicken Marbella

It’s hard to beat Chicken Marbella as a dinner party dish. Assembled the night before, or early morning day of, it sits and marinates until cook time. Flavored with shallots, garlic, dates, olives and wine, Marbella wows with its complex flavors, but is a cinch to throw together. Serve with roasted potatoes, an artisan bread loaf, or a green salad.

Ingredients
 

  • ¼ cup red wine vinegar
  • ¼ cup extra virgin olive oil
  • ¼ cup white wine
  • 2 tablespoons chopped fresh rosemary
  • 4 large garlic cloves, chopped finely
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 2 medium shallots, peeled and cut into wedges
  • 2 tablespoons capers, drained from their brine
  • 5 dates, pitted and cut into quarters
  • ½ cup pitted green Spanish olives, sliced
  • 2 bone in split chicken breasts with skin
  • 2 chicken legs with thighs attached and with skin

Instructions
 

  • Combine the vinegar, olive oil, wine, rosemary, garlic, salt and pepper in a bowl and whisk to combine. Add the shallots, dates, capers and olives.
  • Place the chicken in a large rectangular baker and pour the marinade over and around. Refrigerate overnight or at least 8 hours, turning the chicken a few times over the course of being marinated.
  • Preheat your oven to 350. Roast the chicken, skin side up, until cooked through. It should take roughly 50-55 minutes. Use a meat thermometer to make sure the chicken is cooked through. It should register 160 degrees F. Remove from the oven and let it rest for 10 minutes before serving.
