Chocolate Raspberry Parfaits

This simple dessert, also known as an Eton Mess, is comprised of store-bought meringue cookies, whipped cream and fruit. The twist here is adding cocoa powder to the whipped cream for a chocolate version, and shaving good quality dark chocolate into the layers. If you cannot find meringues, you can make your own but know that it will take at least two hours to bake and cool.

Ingredients
 

  • 5 store-bought meringue cookies, a little over an ounce
  • ½ pint raspberries, washed and dried
  • ½ cup heavy cream
  • 1 tablespoon cocoa powder
  • 2 tablespoons powdered sugar
  • a pinch of salt
  • a dash of vanilla extract
  • a small bar of bittersweet chocolate, you will not use it all

Instructions
 

  • Place the heavy cream into a medium sized bowl and sift the powdered sugar and cocoa powder into the bowl. Whisk vigorously until the mixture is thickened. Add a pinch of salt and dash of vanilla extract and whisk to combine. Be careful as the cream will thicken quickly. You want it to be spoonable.
  • Break up two of the meringues and divide them equally into two stemless wine glasses or other vessels. Layer half of the whipped cream between the two glasses, then about 4 or 5 raspberries per glass. Using a vegetable peeler, shave some chocolate over top of the raspberries. You’ll want to use about a teaspoon per glass per layer. You could also use a box grater, grating the chocolate on the larger holes into a bowl, then spooning it into the glasses.
  • Repeat the layering with the broken meringues, chocolate whipped cream, grated chocolate and a few more raspberries. You may not use all of the raspberries. Top with a few more chocolate shavings, then refrigerate until ready to serve.
