Summer's Best Potluck Dish: Three Bean Salad

Everybody Loves Avocado… Toast

Making avocado toast isn’t difficult, and hardly necessitates a recipe. The most important element is a perfectly ripe avocado. Not too firm, not overly ripe, but perfectly mashable. We like ours topped minimally, with a few sunflower seeds for crunch and herbs for flavor and interest.

Ingredients

  • 1 lare Hass avocado
  • 2 fat slices of artisan bread
  • sprinkle of flaky salt

Optional for serving:

  • extra virgin olive oil
  • fresh lemon juice
  • chopped fresh dill
  • toasted and salted sunflower seeds (not in their shell)

Instructions

  • Toast the bread.
  • While the bread is toasting, cut the avocado in half, remove the pit, and score each side in the peel. Mash it up slightly in the peel with a fork, then scoop out with the fork and smear it on the toasted bread. Top with a sprinkle of salt, drizzle of olive oil, and other desired toppings.
Note: if your avocado isn't ripe enough, it may be difficult to mash it in the peel. In this case, transfer to a bowl and mash with a fork.
