These banana bars are a more healthful addition to your daily routine. Made with almond butter, whole wheat flour, bananas, and the less-refined, coconut sugar, you can feel good about snacking on these treats and tucking them into your kids’ lunchboxes. I also thoroughly enjoy them warmed with a little vanilla ice cream, but that’s up to you.

Ingredients
 

  • 2 large ripe bananas
  • 1 large egg
  • cup coconut sugar
  • ¼ cup almond butter
  • ¾ cup plus 2 tablespoons whole wheat flour
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ½ cup chocolate chips

Instructions
 

  • Preheat your oven to 325 F. Butter an 8 x 8” baking pan and line the bottom and up two sides with parchment paper.
  • Mash the bananas in a large mixing bowl with the coconut sugar. They should be fairly broken down into a mush, but a few small chunks are okay. Add the egg and almond butter and stir well to combine.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon and salt. Stir this into the wet ingredients, then add the chocolate chips.
  • Place the batter in the prepared pan and bake for 20 minutes, until the top is springy and bars are cooked through.
  • Let cool completely in the pan before using the parchment to lift out and cut into bars.
