Ingredients
 

  • 1 head green leaf lettuce, washed and spun dry
  • 1 can hearts of palm, drained and cut crosswise into pieces
  • 1 medium avocado
  • ¼ cup fresh pomegranate seeds

For the dressing:

  • juice of ½ lemon
  • 1 small garlic clove
  • 2 tablespoons sherry vinegar or red wine vinegar
  • 1 teaspoon kosher salt
  • freshly ground black pepper
  • 3-4 tablespoons extra virgin olive oil

Instructions
 

  • Wash the washed lettuce a salad bowl. Top with the hearts of palm, the avocado slices, and the pomegranate seeds.
  • Using a fine rasp grater or microplane, grate the garlic into a small mixing bowl. Squeeze the lemon juice over the garlic and let it sit for a few minutes. The acid from the lemon will mellow some of the sharpness of the garlic. Add all of the remaining ingredients and stir well. When ready to serve the salad, pour the dressing over the salad and toss.
