Honeycrisp Apple Pecan Salad

This simple salad is one of my favorites throughout all of fall and winter. If you are preparing it ahead of time, leave the apple aside. Cut it just before serving the salad so it stays fresh, without turning brown. The crisp crunch of the apple with the sweet pecans, salty cheese, and earthy chickpeas is a combination you’ll fall for instantly.

This simple salad is one of my favorites throughout all of fall and winter. If you are preparing it ahead of time, leave the apple aside. Cut it just before serving the salad so it stays fresh, without turning brown. Ingredients
 

For the salad:

  • 1 large Honeycrisp apple
  • ½ cup candied pecans, very coarsely chopped
  • 2 ounce piece of Parmigiano Reggiano cheese
  • 1 cup cooked or canned chickpeas, rinsed and drained
  • 8 ounces of a mix of arugula and baby kale, or baby spinach

For the vinaigrette:

  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons sherry vinegar
  • teaspoon ground allspice
  • 1 tablespoon honey
  • 1 teaspoon kosher salt, I use Morton's
  • Freshly ground black pepper
  • ½ cup extra virgin olive oil

Instructions
 

  • Place the lettuces, chickpeas and pecans in a large serving bowl. Using a vegetable peeler, shave the parmigiano cheese into the bowl. If you are prepping the salad ahead of time, don’t cut the apple just yet. It will turn brown if cut too far in advance. When you have less than two hours until serving, cut the apple into ½ inch pieces and place in the bowl. Cover with plastic wrap and refrigerate.
  • Mix all of the ingredients for the vinaigrette together. I like to use a glass jar with a lid, making it easy to store in the refrigerator until ready to use. Give it a vigorous shake or whisk to combine if the dressing has separated. To serve, toss the salad with the vinaigrette.
