Mushroom Brie Flatbreads

There’s nothing that brie doesn’t make better – this easy appetizer is no exception. Buy a package of naan bread, scatter it with sauteed mushrooms and onions that have been seasoned with garlic and thyme, then toast it up with sliced brie until it’s melty and crave-worthy. Chopped dates add a touch of sweet that is perfect with the woodsy mushrooms and melty brie.

Buy a package of naan bread, scatter it with sauteed mushrooms and onions that have been seasoned with garlic and thyme, then toast it up with sliced brie until it’s melty and crave-worthy. Ingredients
 

  • 4 purchased naan breads
  • 6 ounces brie cheese
  • 1 tablespoon extra virgin olive oil
  • ¼ sweet onion, sliced
  • 2 sprigs of thyme
  • 1 tablespoon balsamic vinegar mixed with ¼ cup water
  • 10 ounces wild mushrooms, or a mix of cremini and wild mushrooms
  • 2 garlic cloves, sliced thinly
  • 3 dates, pitted and coarsely chopped
  • ¾ teaspoon kosher salt, such as Morton’s
  • freshly cracked black pepper
  • Italian parsley for garnish

Instructions
 

  • Preheat your oven to 350 F. If you are preparing the flatbreads ahead, skip this step until you are ready to warm and serve them.
  • Warm the olive oil in a large skillet over medium heat. Add the onion and cook for 5-8 minutes. Before it begins to brown, pour the water and balsamic mixture into the pan. Allow it to cook until the liquid has totally evaporated and the onions are soft.
  • After the liquid has cooked off, add the mushrooms, garlic, thyme and ¾ teaspoon salt to the pan. Cook, stirring frequently, until the mushrooms are soft. It should take about 8 minutes. Add the dates and plenty of freshly cracked black pepper, then remove from the heat and let cool slightly.
  • Place the naan on baking sheets. You’ll probably need two baking sheets. Distribute the brie evenly between the four naan breads, then distribute the mushrooms evenly as well. You can prepare up to this step and pop the pans in the fridge until ready to bake.
  • Place the naan in the preheated oven and bake until the cheese has melted and the breads are warmed, about 10 minutes.
  • Remove to a cutting board to serve, garnish with parsley and cut them into pieces.
