Ingredients
 

  • 2 cups apple cider
  • ¼ cup sugar
  • 1 tablespoon lemon juice
  • 6 ounces dark rum
  • 4 cups ice cubes
  • apple slices for garnish

Instructions
 

  • Combine the apple cider and sugar in a saucepan. Bring to a boil, then reduce to a simmer and cook until the liquid is reduced by half, which should take about 12-15 minutes. You should have 1 cup of liquid at the end. Remove from the heat, and let cool. Stir in the lemon juice and dark rum. Refrigerate until chilled, about 2 hours.
  • Place the ice cubes in a blender or food processor, and pulse a few times. Add the chilled apple cider mixture and blend. Depending on the size of your blender, you may have to make two batches. Divide between four lowball glasses, garnish with an apple slice and serve.
