Radicchio & Apple Salad with Salted Almonds and Gorgonzola Dressing

Blue cheese lovers, this one’s for you. An easy, creamy gorgonzola dressing couldn’t be easier to make, and the salad itself can be assembled in under 10 minutes. Keep the dressing and the salad separate if you’d like to make this ahead, tossing just before serving.

Ingredients

For the salad:

  • 1 medium head of radicchio
  • 1 large crisp apple, such as Fuji
  • 1 small fennel bulb, very thinly sliced
  • 2 tablespoons golden raisins
  • 1 tablespoon white wine vinegar
  • ½ teaspoon sugar
  • ½ cup salted almonds

For the dressing:

  • ½ cup sour cream
  • ¼ cup gorgonzola
  • 1 tablespoon lemon juice
  • 1 small garlic clove
  • 1 teaspoon kosher salt
  • Fresh chives for garnish

Instructions

  • Dissolve the sugar in the tablespoon of vinegar in a small bowl and add the raisins. Allow them to plump in the liquid while you prepare the salad.
  • Slice the radicchio and place in a serving bowl. Cut the apple in half, remove the core, then slice thinly and add to the bowl with the radicchio, along with the thinly sliced fennel and the almonds.
  • Mix the sour cream, gorgonzola, and lemon juice together in a small bowl. Add the salt and use a fork to mash it together. If you’d like a completely smooth texture, you can use a mini food processor to blend the dressing. Taste for seasoning and add more salt if needed. If your sour cream is very thick, you may need to thin out the dressing with a little water.
  • To serve, drain the raisins and add them to the salad bowl. Toss with the dressing and garnish with the chives.
