Raspberry Almond Butter Overnight Oats in two bulbous stemless wine glasses topped with fresh raspberries and slivered almonds set upon a white table cloth with two spoons in foreground
Raspberry Almond Butter Overnight Oats

This is a sort of hybrid between chia pudding and overnight oats. One thing to note, the chia seeds take 15-ish minutes to expand and soak up moisture. So, after mixing the ingredients together, you pop the bowl in the fridge, and then take it out and continue with the recipe, adding more liquid to adjust the consistency before moving on. I prefer only 2 tablespoons of maple syrup in this recipe, however if you like your oats on the sweeter side, go ahead and add a little more to taste.

Ingredients

  • ¾ cups rolled oats
  • 1 ½ tablespoons chia seeds
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon or cardamom
  • ½ cup plain yogurt
  • ½-¾ cup milk of choice – cow's milk, almond milk, oat milk or coconut milk
  • 2-3 tablespoons pure maple syrup
  • ¼ cup raspberries
  • 4 teaspoons almond butter
  • optional: toasted sliced almonds for garnish

Instructions

  • Mix the oats, chia seeds, salt and cinnamon in a medium bowl. Stir in the yogurt,½ cup of the milk, and maple syrup then pop the bowl in your refrigerator for 10-20 minutes. The chia seeds will expand and soak up some liquid. It will likely be thick, and you will need to add another ¼ cup of milk at the end of the resting period, which will loosen up the mixture again.
  • Stir in the raspberries and almond butter. The almond butter does not need to be totally incorporated. It’s ok if it has some smaller clumps of almond butter, or streaks.
  • Spoon the mixture into jars, cover and refrigerate overnight. You could also leave it in the mixing bowl, and spoon it into two bowls in the morning to serve. Top with fresh raspberries and sliced almonds if you like.
