Roasted Cauliflower with Brown Butter Vinaigrette, Dried Cherries & Pumpkin Seeds

Fish sauce, brown butter, maple syrup and garlic may sound like an odd combination, but when tossed with oven roasted cauliflower they come together to create a magical salad. You can make this dish about an hour ahead of time, but keep it at room temperature until serving. When refrigerated, the butter will solidify which is much less appealing.
