Rosemary Roasted Delicata Squash Salad with Grapes & Hazelnuts

The flavors of autumn are present in this easy to make salad. You must allow time for the squash to roast and cool, but then it is simply arranging the ingredients in a bowl and tossing with oil and vinegar. Balsamic syrup, a thickened balsamic vinegar with a concentrated flavor, can be found with the vinegars at your grocery.

Ingredients
 

  • 1 medium delicata squash
  • ½ cup purple grapes, large ones cut in half
  • 1 tablespoon chopped rosemary
  • 1 head of red or green leaf lettuce, washed and spun dry
  • 2 tablespoons balsamic syrup
  • ¼ cup shredded asiago cheese
  • ¼ cup toasted hazelnuts, roughly chopped
  • 3 tablespoons extra virgin olive oil
  • kosher salt
  • freshly ground black pepper

Instructions
 

  • Preheat your oven to 375 F. Halve the squash lengthwise and scoop out seeds. Slice into ½ inch crescents and place them on a baking sheet. Sprinkle generously with salt and pepper, and add the chopped rosemary. Drizzle with enough olive oil to coat, about 1 tablespoon, then roast in the oven for 30 minutes or until soft and golden. Let cool while assembling rest of salad.
  • Place the washed lettuce in your salad bowl, and top with the cooled squash, grapes, nuts and cheese. Drizzle with balsamic vinegar, more salt and pepper, and good extra virgin olive oil. Toss and serve.

Notes

* To make your own reduced balsamic, boil balsamic vinegar until thick and syrupy, and reduced by at least half. Let cool before using. It will continue to thicken as it cools, so watch it carefully and remove from the heat while it is the consistency of runny honey.
