Sformata – Or Calzone Cheese Dip

Imagine a hot cast iron skillet, filled with creamy ricotta cheese, studded with fresh mozzarella, seasoned with garlic, mint and nutmeg. Dig in, scooping up a big spoonful, and smear it all over a slice of crusty baguette. If you’ve ever had ricotta stuffed calzone, it’s kind of like that. Rich, garlicky, and delicious. Make this ahead, and bake to serve.

Ingredients
 

  • 16- ounce container of ricotta
  • 2 eggs
  • 8 large fresh mint leaves, torn or roughly chopped
  • 2 garlic cloves, finely grated on a rasp grater
  • ½ teaspoon kosher salt
  • teaspoon ground nutmeg
  • 4 ounces fresh mozzarella, diced
  • ½ cup grated parmigiano reggiano
  • Olive oil for coating the skillet
  • Crostini or sliced baguette, toasted, for serving

Instructions
 

  • Preheat your oven to 350 F. Coat a 9-inch cast iron skillet with olive oil, or use a similarly sized baking dish if you do not have a cast iron pan.
  • Put the ricotta into a food processor and blend until it is creamy and no longer grainy. Add the eggs, mint, garlic, salt and nutmeg and blend again until the ingredients are well combined. You can also do this in a bowl, using a whisk, just make sure to whisk vigorously to get the ricotta as smooth as possible. Stir in the mozzarella.
  • Pour the mixture into your prepared baking dish, then sprinkle the parmigiano evenly on top. Bake for 20-25 minutes, until the cheese is set and no longer giggly in the middle.
  • To serve, place the skillet on a trivet, warn everyone that the pan is hot, and serve with toasted baguette slices.
