Shrimp on a platter with Spicy Chili Tomato Dipping Sauce in bowl and limes on side for garnish
Shrimp with Spicy Chili Tomato Dipping Sauce

I can’t call this a shrimp cocktail, even though presentation and preparation-wise it’s not too dissimilar. But the dipping sauce, while tomato based, is far from the usual ketchup and horseradish combo. This supremely flavorful dish uses tomato paste for depth of flavor, chipotle chili powder for a kick, and fresh lime juice to brighten it up.

I can’t call this a shrimp cocktail, even though presentation and preparation-wise it’s not too dissimilar. But the dipping sauce, while tomato based, is far from the usual ketchup and horseradish combo. This supremely flavorful dish uses tomato paste for depth of flavor, chipotle chili flakes for a kick, and fresh lime juice to brighten it up. This will serve 4 people as a light appetizer, with about 4 shrimp per person.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon plus 1 teaspoon extra virgin olive oil, divided use
  • 2 garlic cloves, grated finely on a rasp grater
  • ½ teaspoon chipotle chili flakes
  • 3 tablespoons tomato paste
  • 1 teaspoon maple syrup
  • 3 tablespoons water
  •  ¾ teaspoon kosher salt, such as Morton's
  • 1 tablespoon fresh lime juice

Instructions

  • Heat a large cast iron skillet over medium high heat. Add a tablespoon of olive oil, then sear the shrimp until they are cooked through, about a minute per side, depending on their size. Remove to a platter. Refrigerate if not serving right away.
  • Warm the remaining teaspoon of olive oil in a small pan. Add the garlic and chipotle chili and cook over low heat for a minute, then add the tomato paste. Cook the tomato paste for another 1-2 minutes, stirring, until it turns to a brick red color. Add the water, maple syrup and salt and stir to combine. Let it cook for a minute longer, then remove from the heat. Add the lime juice and taste for seasoning, adding more salt or lime if needed. Allow the sauce to cool to room temperature, and refrigerate if not using right away.
  • Serve the shrimp with the dipping sauce.
