Ingredients

  • 2 strips bacon
  • ½ tablespoon butter
  • 1 small sweet onion, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon chopped fresh rosemary
  • 2 tablespoons flour
  • 2 ½ cups chicken broth
  • ½ cup whole milk
  • 1 can white beans, drained and rinsed
  • 6 ears corn, shucked
  • ½ lime
  • ½ cup Greek yogurt or sour cream
  • fresh cilantro and chili powder for serving

Instructions

  • Cook the bacon in a large saucepan until crispy. Remove, chop and set aside for garnish.
  • Add the butter to the pan, and saute the onions and garlic over low heat until softened, about 15 minutes. Meanwhile, using the large holes on a box grater, grate two ears of corn into a bowl. Add the drained white beans to the same bowl, mashing them with a potato masher or large fork. Cut the kernels off of the remaining four ears of corn and place in the same bowl along with the chopped rosemary.
  • When the onions are soft, add the flour to the pot and cook, stirring, for 2-3 minutes over low heat. Slowly pour in the chicken broth and milk, stirring the whole time to avoid lumps. Add the beans, corn and rosemary, and 1 teaspoon salt and bring to a simmer. Cook, stirring occasionally, over medium-low heat until the corn is cooked and it is slightly thickened, about 20 minutes. Taste for seasoning and add more salt if needed.
  • In a small bowl, combine the yogurt, juice and zest from ½ of the lime.
  • Ladle the soup into bowls, add a dollop of the lime crema and sprinkle with the bacon. If desired, also top with a sprinkle of chili powder and cilantro.
