Super Moist Baked Turkey Meatballs

Turkey meatballs lack the fat that pork or beef meatballs carry, and can often end up dry. My method for ensuring a moist turkey meatball is simple. Soak sourdough bread in milk to soften, squeeze out the extra milk and mix the soaked bread into the meat and seasonings. This keeps the meatball light, never dense or chewy. After you’ve baked them off, the turkey meatball can be used to make spaghetti, or as I call for here, subs.

Ingredients
 

  • 1 pound ground turkey
  • 1 cup sourdough bread, crusts removed
  • ¼ cup whole milk
  • 1 large egg
  • 1 large garlic clove, grated using a fine rasp grater
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon fennel seeds, crushed with the side of a large knife
  • 1 teaspoon dried oregano
  • extra virgin olive oil
  • hoagie rolls for serving
  • 2 cups tomato sauce for serving
  • shredded mozzarella dheese for serving

Instructions
 

  • Preheat your oven to 350 F. Line a baking sheet with parchment paper or oil the baking sheet.
  • Tear the bread into pieces and place in a large bowl. Pour the milk over the bread and let it soak for about 5 minutes. Squeeze the extra milk out of the bread, discard the milk and return the bread to the bowl.
  • Add the egg, turkey, garlic, salt, oregano and fennel seed to the bread. Use your hands to mix everything together until thoroughly combined.
  • With wet hands, shape the meat mixture into balls a little smaller than a golf ball. Place them on the prepared baking sheet about 1 inch apart. Bake in the preheated oven for 15-20 minutes, until cooked through.
  • To make hoagies, add tomato sauce to a pot and warm over medium low heat. When the meatballs are finished cooking, add them to the sauce. Scoop a few meatballs into a toasted hoagie roll, top with cheese and serve hot.

Notes

  • I save old bread for recipes like this. Next time you have a loaf that is getting stale, cut it up into cubes and freeze it in a plastic bag. Then you can take out just what you need.
