Tomato Strawberry Salsa with Habanero & Fresh Mint

This is a fresh and bright salsa, slightly sweet but not overly so. A fun and festive break from the standard salsa roja when served as an appetizer with tortilla chips, but shines over grilled fish, too. If habanero chilis are too much for you, dial the heat back by using jalapeno or serrano chili instead.

Ingredients
 

  • 1 pound tomatoes, seeded and chopped
  • ½ cup red onion, chopped
  • 1 cup fresh strawberries, diced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • ½ teaspoon dried oregano
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
  • ½ habanero chili, chopped finely

Instructions
 

  • Combine all ingredients in a bowl and stir well to combine. Taste for seasoning, and add more salt if needed. This salsa is best served immediately, but can be made 1-2 hours ahead.
