The Best Leafy Greens to Eat for Better Bone Health

You remember milk mustaches and the got milk? campaign of the early 90s. Advertisements were plastered everywhere, with some of our favorite celebrity personalities renting their upper lip to the dairy council. The goal of the campaign was to make milk cool again – in turn, these ads brought specific awareness to the importance of bone health. Calcium and vitamin D became part of our general awareness, even that of teenagers… take it from the 14 year old me.

Today, in addition to getting my calcium and vitamin D from dairy (plus seafood, legumes and eggs), I choose to get mine from an army of leafy greens. But calcium and D aren’t the only vitamins and minerals that play key roles in bone health. Magnesium, vitamin K, and vitamin C are vital to bone strength and density. Many leafy greens come packed with these essential vitamins and minerals. Which are the best leafy greens to eat for better bone health? And how can we incorporate more leafy greens into our diet? Lets find out:

The Top Leafy Greens for Stronger Bones

  1. Kale

Kale has earned a reputation as one of the most nutrient-dense greens, and for good reason. Packed with calcium (around 180 mg per cup when cooked), kale helps support bone density. But its benefits don’t stop there— as nutritionist Dr. Tieraona Low Dog notes, “Kale is one of the top greens for bone health because it provides not only calcium but also magnesium and vitamin K, two key nutrients that help regulate calcium use in the bones.” Vitamin K, in particular, helps with the synthesis of osteocalcin, a protein that helps bones bind to calcium, making them stronger.

  1. Spinach

Spinach might not have as much calcium as kale, but it’s a powerhouse when it comes to magnesium, an essential mineral that works alongside calcium to maintain bone strength. Magnesium also helps convert vitamin D into its active form, which is essential for calcium absorption. As Dr. Susan B. Roberts, a leading nutrition expert, states, “Magnesium is often the unsung hero of bone health. Spinach is an excellent source, and when paired with calcium, it works synergistically to strengthen bones and enhance mineral absorption.”

  1. Swiss Chard

A single cup of Swiss chard offers more than 700% of your daily recommended intake of vitamin K, making it an ideal choice for maintaining bone health. Vitamin K plays an important role in bone mineralization, so consistently adding Swiss chard to your diet can help ensure that your bones remain strong and resilient over time. According to Dr. Walter Willett, Professor of Epidemiology and Nutrition at Harvard University. “[Vitamin K] activates proteins that bind calcium to the bone matrix, allowing calcium to be used effectively in the bones, not deposited elsewhere in the body.”

  1. Collard Greens

Collard greens, often overshadowed by their more popular cousins like kale, deserve a closer look. Rich in calcium (around 250 mg per cup when cooked), collard greens help fortify bones and support healthy bone remodeling. They also contain vitamin C, which helps in the production of collagen, the protein that gives bones their structure and strength. Adding these hearty greens to your diet can provide the perfect balance of nutrients for optimal bone health.

  1. Arugula

While arugula is often thought of as a peppery addition to salads, it’s also a bone-booster. Rich in vitamin K, magnesium, and calcium, arugula supports healthy bone formation and maintenance. Plus, its light, slightly spicy flavor makes it a delicious addition to any dish—whether you’re tossing it in a salad or using it as a topping for roasted vegetables. Dr. Andrew Weil, a leading integrative medicine expert, states, “Arugula’s high levels of vitamin K and magnesium make it a great choice for anyone looking to promote bone health. It’s also a versatile green that can be added to countless meals to up your bone-strengthening intake.”

  1. Mustard Greens

Often overlooked, mustard greens are a fantastic source of calcium, vitamin K, and magnesium, all of which contribute to bone health. These greens also contain glucosinolates, plant compounds that have been shown to have anti-inflammatory properties, which can help reduce bone loss associated with conditions like arthritis. Mustard greens can be sautéed, steamed, or even added to soups for a flavorful and nutritious bone-supporting boost.

How to Incorporate More Leafy Greens into Your Diet

Adding more leafy greens to your diet is easy. Here are a few simple ideas to get started:

  • Green Smoothies: Blend a handful of kale, spinach, or arugula with fruits like bananas, berries, or mango for a nutrient-packed smoothie.
  • Salads: Create vibrant salads using a mix of greens like kale, spinach, and arugula. Add toppings like seeds, nuts, or even roasted chickpeas to boost flavor and texture.
  • Sautéed Greens: Sauté mustard greens, collards, or Swiss chard in olive oil with garlic and a sprinkle of lemon for a quick, delicious side dish.
  • Soups and Stews: Toss leafy greens into soups and stews for added flavor and nutrition. Greens like kale and collards hold up well in hot dishes, infusing them with their rich, earthy flavor.
  • Wraps and Sandwiches: Use large, sturdy greens like collard greens or Swiss chard as wraps instead of tortillas. It’s a great way to add extra nutrients without the extra calories.
